Innovative chocolate chip cookies blend sweet potato puree and orange juice for a healthier and delightful treat with crispy edges and chewy centers.
Ingredients:
  • 0.25 cup sweet potato puree
  • 0.5 cup white sugar
  • 1 cup packed brown sugar
  • 4 egg whites
  • 2 teaspoons vanilla extract
  • 2 teaspoons hot water
  • 2 cups semisweet chocolate chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Using an electric mixer, blend butter, sweet potato, white sugar, brown sugar, and orange juice in a large bowl until smooth. Add egg whites one at a time, ensuring each egg blends in before adding the next. Mix in vanilla extract. Dissolve baking soda in hot water. Add it to sweet potato batter. Fold in flour, chocolate chips, and walnuts. Shape dough into walnut-sized balls and space 2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven until edges are golden brown, approximately 10 minutes.
