Indulge in moist and delicious chocolate chip cookies with a healthy twist - featuring kiwi and whole grain cereal.
Ingredients:
  • 0.5 cup butter
  • 1 kiwi, pureed
  • 0.5 cup brown sugar
  • 0.5 cup white sugar
  • 2 eggs
  • 2 teaspoons Mexican vanilla extract
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup toasted oat cereal (such as Cheerios ®), smashed
  • 2 cups milk chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while you generously grease two baking sheets.
  • In a large bowl, blend butter, kiwi, brown sugar, and white sugar until light and fluffy. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract. In a separate bowl, combine flour, baking soda, and toasted oat cereal; gradually incorporate into the creamed mixture. Gently fold in the chocolate chips. Spoon rounded portions onto the baking sheets.
  • Bake in preheated oven for 8-10 minutes until lightly browned. Let cookies cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
