Quick and tasty sweet potato side dish with zesty orange-ginger dressing. Ready in just 35 minutes!
Ingredients:
  • 3 lb medium sweet potatoes, peeled, cut into 3/4-inch chunks
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon grated gingerroot
  • 1 teaspoon grated orange peel
  • 1/4 cup fresh orange juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup pecan halves, coarsely chopped, toasted if desired*
  • 1/4 cup golden raisins
Instructions:
  • In a 2-quart saucepan, bring half an inch of water to a boil. Add potatoes, cover tightly, and simmer for 15 to 20 minutes until tender.
  • In a small bowl, whisk together the dressing ingredients.
  • Combine the cooked potatoes, pecans, and raisins in a large bowl, then pour the dressing over the mixture. Gently toss everything together. Serve right away or refrigerate until serving time.
