Roasted sweet potato salad with crispy ham and spinach

Sweet potato salad with crispy ham for a deliciously crunchy twist.
Ingredients:
  • 1kg sweet potato, cut into bite sized pieces
  • 3 cloves garlic, thinly sliced
  • 1 tsp whole cumin seeds
  • 1 tsp whole coriander seeds
  • 45.50 gm extra virgin olive oil
  • 150g triple smoked leg ham, chopped
  • 125.00 ml chopped fresh coriander
  • 50g baby spinach leaves
  • 3 tsp balsamic vinegar
  • Sea salt and freshly ground black pepper, to taste
Instructions:
  • Preheat your oven to 200°C. Combine sweet potato, garlic, cumin seeds, coriander seeds, and 2 tablespoons of oil in a large roasting pan, then roast in the oven for 30 minutes.
  • Heat the remaining oil in a small frying pan until shimmering. Add the ham and sauté over high heat until it turns a beautiful golden brown. Remove from heat and set aside.
  • Take the pan out of the oven and incorporate the ham and fresh coriander. Mix well. Place spinach leaves in a large serving bowl. Top with hot sweet potatoes, drizzle with vinegar, and season with salt and pepper. Gently toss to combine until the spinach wilts slightly. Serve warm or at room temperature.
