Colorful salad starring roasted sweet potatoes, cashews, feta, mixed greens, and balsamic vinaigrette.
Ingredients:
  • 3 small sweet potatoes, peeled and cubed
  • 2 teaspoons cumin seeds
  • 0.33333334326744 cup cashews
  • 1 (6 ounce) package feta cheese, cubed
  • 1 cup fresh spinach
  • 1 cup arugula
  • 1 cup watercress
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 pinch white sugar
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Toss sweet potatoes, olive oil, and cumin seeds on a roasting tray; season with salt and pepper. Spread cashews on a baking sheet.
  • Roast potatoes in the preheated oven for 30-45 minutes, stirring halfway through, until soft and golden at the edges.
  • Toast cashews in the oven until golden brown and fragrant, around 10 to 15 minutes. Chop once cooled.
  • Whisk together oil, vinegar, sugar, salt, and pepper in a small bowl for the dressing.
  • Distribute feta cheese, spinach, arugula, watercress, and cilantro evenly onto 3 plates. Add warm sweet potatoes and cashews on top. Drizzle dressing over the salad and enjoy.
