Sweet Potato Salad with Bacon Vinaigrette

Elevate dinner with a savory nutty salad featuring roasted sweet potatoes and crispy bacon, ready in just an hour!
Ingredients:
  • 4 lb sweet potatoes, peeled, cut into 3/4-inch pieces
  • 1 small red onion, cut into thin wedges
  • 6 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 4 slices thick-sliced bacon
  • 1 tablespoon cider vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon freshly ground pepper
  • 3/4 cup pecan pieces, toasted
  • 1/2 cup golden raisins
Instructions:
  • Preheat your oven to 450°F. Grease 2 large pans with cooking spray. In a big bowl, mix sweet potatoes, onion, 2 tablespoons of oil, and 3/4 teaspoon salt. Spread the vegetables out in a single layer on the pans.
  • Roast uncovered for 25 minutes, then remove the onion from the pans and set aside. Stir the sweet potatoes and roast for an additional 10 minutes or until browned.
  • In a nonstick skillet, cook bacon over medium heat until crispy, about 10 to 12 minutes. Drain on paper towels and crumble, setting it aside. Reserve 2 tablespoons of drippings in the skillet. Add remaining oil, salt, vinegar, mustard, and pepper to the skillet with the drippings, stirring well.
  • Pour the vinaigrette into a large bowl then add in the roasted sweet potatoes, onion, bacon, pecans, and raisins. Gently toss everything together to ensure everything is coated evenly.
