Elevate your lunch with roasted sweet potato and our delicious tahini dressing!
Ingredients:
  • 10.60 gm fresh lemon juice
  • 6.00 gm tahini
  • 125g can four bean mix, rinsed, drained
  • 100g chopped roasted sweet potato
  • 30g baby spinach and rocket mix
  • 25g feta, crumbled
  • 20.00 ml dried cranberries
  • 2 tsp pepitas
Instructions:
  • In a bowl, mix together the lemon juice, tahini, and 2-3 tsp water until well combined.
  • In a serving bowl, mix together beans, sweet potato, spinach, rocket, feta, and cranberries. Drizzle with the tahini mixture and sprinkle with pepitas before serving.
