Irresistible potato skins with crispy bacon, melted Cheddar cheese, sour cream, and green onions - a perfect homemade appetizer.
Ingredients:
  • 6 small russet potatoes, scrubbed
  • 1 tablespoon olive oil, or as needed
  • 1 tablespoon canola oil, or as needed
  • salt to taste
  • 6 slices center-cut bacon
  • ground black pepper to taste
  • 0.5 cup shredded Cheddar cheese, or to taste
  • 0.25 cup sour cream, or to taste
  • 2 medium green onions, thinly sliced
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Coat potatoes in olive oil and arrange on a baking sheet.
  • 1. Roast in the preheated oven until tender, approximately 1 hour. Rest outside the oven until lukewarm, around 10 minutes. Raise the oven temperature to 450°F (230°C).
  • Halve the potatoes lengthwise and carefully scoop out the flesh, leaving a 1/4-inch layer on the skin. Brush both the inside and outside of the potato skins with canola oil, then sprinkle with salt. Save the scooped-out flesh for later use.
  • Bake skins in the preheated oven for 10 minutes, flip, and bake for an additional 10 minutes. Then, switch on the oven's broiler.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until beautifully browned, for about 10 minutes. Drain the crispy bacon on a paper towel-lined plate and crumble it.
  • Place the potato skins flesh-side up on a roasting pan or rack. Season with black pepper, sprinkle with Cheddar cheese and crumbled bacon. Broil until cheese is bubbly, for about 2 minutes. Remove from the oven.
  • Top each baked potato skin with a generous dollop of sour cream and a sprinkle of fresh green onions before serving.
