Crispy skinny chips paired perfectly with creamy aioli.
Ingredients:
  • 1kg potato
  • vegetable oil, for deep-frying
  • 1.20 gm sea salt
  • 1/4 tsp cracked black pepper
  • Aioli, to serve
Instructions:
  • Slice potatoes into thin 4mm sticks. Pat dry with paper towels and let sit for 10 minutes.
  • In a wok or large deep frying pan, heat oil over medium-high heat. Deep-fry potato in batches until they rise to the surface and turn opaque. Transfer fries to a paper towel-lined tray using a slotted spoon. Let them cool for 10 minutes.
  • Heat up the oil until it's hot. Deep-fry the fries in batches for an additional 2 to 3 minutes until they turn golden brown. Place them on a paper towel to drain. Transfer the fries to a bowl and season with salt and pepper. Toss them to coat evenly. Serve with aioli.
