Cheesy bacon-topped baked potato rounds - a simple and delicious appetizer reminiscent of potato skins!
Ingredients:
  • 2 large baking potatoes
  • 6 slices bacon
  • 1 cup shredded Cheddar cheese
Instructions:
  • In a large pot, cover the potatoes with water and bring to a boil. Cook until easily pierced with a fork, around 20 minutes. Drain and let cool.
  • Preheat the oven to 350°F (175°C) and lightly grease a baking sheet. Crisp up the bacon in a large skillet over medium-high heat until done. Drain, cool, and then crumble.
  • Layer the potato rounds on the baking sheet, topping each with a sprinkle of bacon crumbles and shredded Cheddar cheese.
  • Bake in a preheated oven for 15 minutes, or until the cheese is melted and lightly browned.
