Juicy grilled pork chops topped with zesty Italian cherry salsa with onions, basil, and balsamic vinegar.
Ingredients:
  • 1/2 cup red onion, chopped
  • 2 tablespoons lemon juice
  • 1 1/2 pounds cherries, about 4 cups
  • 4 pork chops, about 3/4-inch thick
  • Salt
  • Extra virgin olive oil
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1 heaping teaspoon sugar
Instructions:
  • Combine chopped onion with zesty lemon juice in a small bowl and let it sit, allowing the flavors to meld and mellow out.
  • Coat the pork chops in rich olive oil and sprinkle them with a touch of salt before letting them rest at room temperature.
  • Pit and remove stems from the cherries using a cherry pitter for ease or a small knife if needed. Be sure to thoroughly check for any stray pits.
  • Prepare salsa: Combine cherries, onions, and basil in a food processor and pulse until chunky with varying textures of cherry. Alternatively, chop ingredients by hand.
  • Enhance the salsa by blending in the balsamic vinegar, 1/2 teaspoon of salt, and sugar to your liking. Allow the flavors to meld at room temperature. Prepare the salsa up to 8 hours ahead.
  • Grill pork chops: Preheat grill to high heat. Grill pork chops with the cover closed for 3 minutes on one side. Rotate them 45 degrees for a cross-hatch pattern, grill covered for another 3 minutes. Flip chops, grill uncovered for 2-3 minutes. Rest for 5-10 minutes before serving with cherry salsa.
