Delicious and quick 25-minute meal: Pork chops with raspberry-chipotle sauce and flavorful herbed rice. Perfect for family dinner!
Ingredients:
  • 4 bone-in pork rib chops, about 3/4 inch thick
  • 1/2 teaspoon garlic pepper
  • 1/3 cup all-fruit raspberry spread
  • 1 tablespoon water
  • 1 tablespoon raspberry-flavored vinegar
  • 1 large or 2 small chipotle chiles in adobo sauce, finely chopped (from 7-oz can)
  • 1 package (8.8 oz) quick-cooking (ready in 90 seconds) whole-grain brown rice
  • 1/4 teaspoon gluten-free salt-free garlic herb blend
  • 1/2 teaspoon lemon peel
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Season pork generously with garlic pepper. Heat oil in a large nonstick skillet over medium-high heat. Cook pork for 8 to 10 minutes, turning once, until it reaches an internal temperature of 145°F. Transfer pork to a serving platter, keeping it warm. Reserve the pork drippings for added flavor.
  • In a small bowl, combine raspberry spread, water, vinegar, and chili; set aside. Cook the rice according to package instructions. Stir in the remaining rice ingredients and keep warm.
  • Pour the raspberry mixture into the skillet with pork drippings and cook over low heat for about 1 minute, stirring constantly, until the sauce is bubbly and slightly thickened. Serve the pork chops with the sauce and rice.
