Exciting and unique pork dish featuring sweet summer cherries for a delicious twist!
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 (8 ounce) bone-in pork chops
  • salt and pepper to taste
  • 0.25 cup butter
  • 0.75 cup sliced shallots
  • 1.5 cups fresh black cherries, pitted and halved
  • 2 tablespoons red wine
  • 0.25 cup beef broth
  • 0.25 teaspoon dried rosemary leaves, crumbled
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a baking sheet lined with aluminum foil.
  • In a large skillet over medium-high heat, warm the vegetable oil. Season the pork chops with salt and pepper, then sear in the hot oil until golden brown on both sides, about 2 minutes per side. Transfer the pork chops to a baking sheet lined with parchment paper. Bake in the preheated oven until the pork chops reach 145 degrees F (63 degrees C) in the center, about 20 minutes.
  • As the pork chops bake, melt butter in the same skillet over medium heat, then add shallot and cherries. Sauté until shallot starts to soften, around 2 minutes. Pour in red wine and beef broth, bring to a simmer. Add rosemary, cook until the sauce thickens. Season with salt and pepper and pour over the pork chops before serving.
