Herb-infused pork loin chops with raspberry sauce, served with mashed potatoes and steamed carrots. A heavenly dish loved by family and guests, eagerly anticipated for next time.
Ingredients:
  • 0.5 teaspoon dried thyme, crushed
  • 0.5 teaspoon dried sage, crushed
  • 0.25 teaspoon pepper
  • 4 (4 ounce) boneless pork loin chops
  • 0.25 cup seedless raspberry jam
  • 2 tablespoons orange juice
  • 2 tablespoons white wine vinegar
  • 4 sprigs fresh thyme
Instructions:
  • Preheat oven to 200°F (95°C). Mix crushed thyme, sage, salt, and pepper in a bowl. Coat pork chops evenly with the mixture.
  • In a nonstick skillet, melt butter and olive oil. Sear pork chops for 4 to 5 minutes per side, only flipping once. Transfer pork chops from skillet to a preheated oven to keep warm.
  • Combine raspberry jam, orange juice, and vinegar in a skillet and bring to a boil. Cook for 2 to 3 minutes until the sauce thickens. Spoon the sauce onto a serving plate, top with pork chops, and garnish with thyme sprigs.
