Elevated BBQ chicken quesadillas for a gourmet twist!
Ingredients:
  • 27.30 gm olive oil
  • 200g onion
  • 8 garlic cloves, finely chopped
  • 40.00 ml chopped chipotle chillies in adobo (smoked, pickled jalapenos in sauce)
  • 400g can chopped tomatoes
  • 70g tomato paste
  • 250ml malt vinegar
  • 120g caster sugar
  • 2 mangoes, flesh cut into 2cm cubes
  • 1 avocado, flesh cut into 2cm cubes
  • 1 long red chilli, seeds removed, finely chopped
  • Juice of 1/2 lime, plus extra lime wedges to serve
  • 250.00 ml finely chopped coriander, plus extra leaves, to serve
  • 8 flour tortillas
  • 1 small barbecued chicken, meat shredded, skin and bones discarded
  • 250g mozzarella
Instructions:
  • In a pan over medium heat, warm oil. Stir in onion and garlic, cook for 5 minutes until softened. Mix in chipotle, tomato, paste, vinegar, sugar, 1 cup (250ml) water, and 2 teaspoons salt. Simmer, then reduce to low heat. Stir occasionally for 45 minutes until thickened. Let cool. For later use, pour into a sterilized jar, seal, and refrigerate for up to 2 weeks.
  • Mix together ripe mango, creamy avocado, spicy chili, zesty lime juice, and fresh coriander in a bowl. Set the flavorful mixture aside.
  • Heat up a well-oiled barbecue or large frypan on high heat. Spread chipotle relish on half of the tortillas. Add chicken and mozzarella on top. Top with the remaining tortillas. Cook by pressing down with a heavy pan or spatula for 2 minutes on each side. Cut quesadillas into quarters and serve with mango salsa, extra coriander leaves, and lime wedges.
