Mexican-inspired chicken quesadillas made with Old El Paso™ Flour Tortillas and salsa, ready in just 35 minutes for a quick and flavorful meal.
Ingredients:
  • 3 tablespoons olive oil
  • 1/2 red bell pepper, cut into thin strips
  • 1/2 large onion, thinly sliced
  • 1/2 cup frozen corn
  • 1 1/2 cups shredded cooked chicken
  • 1 cup shredded Monterey Jack cheese (2 oz)
  • 1 tablespoon finely chopped chipotle chile in adobo sauce (from 7-oz can)
  • 2 tablespoons chopped cilantro
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 6 tablespoons salsa
Instructions:
  • Heat 1 tablespoon of oil in a nonstick skillet over medium-high heat. Sauté bell pepper, onion, and corn for 4 to 5 minutes until softened. Remove from heat and mix in chicken, cheese, chipotle chile, and cilantro.
  • Brush one side of each tortilla with the remaining 2 tablespoons of oil. Place the oiled side down and spread 2 tablespoons of salsa on each of the 3 tortillas. Add about 1 cup of the chicken mixture on each tortilla over the salsa. Finally, top each with the remaining tortillas, oiled side up.
  • Preheat a 10-inch nonstick skillet over medium heat. Cook each quesadilla for 1 to 2 minutes on each side until the tortilla is golden brown and the cheese is melted. Cut the quesadillas in half before serving.
