Vegan sweet potato and apple medley - perfect for Thanksgiving!
Ingredients:
  • 4 large sweet potatoes
  • 1 teaspoon vegetable oil, or as needed
  • 2 tablespoons vegan margarine (such as Earth Balance®), melted
  • 0.33333334326744 cup maple syrup
  • 2 large apples - peeled, cored, and thinly sliced
  • 1 pinch cinnamon, or to taste
  • 1 pinch ground cloves, or to taste
  • 0.5 cup apple juice
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then elegantly arrange your sweet potatoes on a baking sheet.
  • Bake in the preheated oven for approximately 20 minutes, until cooked through yet still firm.
  • Take the sweet potatoes out of the oven and let them cool until you can handle them safely. Peel them and slice into 1/2-inch pieces.
  • Prepare the baking casserole by greasing it with oil. Layer half of the sweet potato slices on the bottom, then drizzle with half of the melted vegan margarine and half of the maple syrup. Top with apple slices, lightly sprinkle with cinnamon and cloves, then repeat the layers. Finish by pouring apple juice over the top and covering the casserole with a lid or aluminum foil. Enjoy your delicious dish!
  • Bake covered in a hot oven for 30 minutes. Uncover and bake for an additional 10 minutes. Serve immediately or keep warm until serving.
