Jersey royals reign supreme as the ultimate new potato, evoking the same pride and passion as Italian olive groves and vineyards during the harvest season.
Ingredients:
  • 1 kg Jersey Royals
  • 2 bunches of fresh mint
  • 1 red onion
  • 200 g cornichon
  • 250 ml red wine vinegar
  • olive oil
Instructions:
  • Start by washing the potatoes, finely chopping the mint (keep the stalks), and thinly slicing the onion. Cut the cornichons into strips. Boil the Jersey Royals and mint stalks in salted water for about 10 minutes until tender. Let them cool in a colander (avoid rinsing with cold water for better flavor). Marinate the onion in red wine vinegar. Crush the cooled potatoes in a salad bowl, then add marinated onions, cornichons, mint, season, drizzle with oil, and serve.
