Ingredients:
  • 750 g Jersey Royals
  • 8 spring onions
  • 1 bunch of asparagus (180g)
  • ½ a bunch of fresh flat-leaf parsley (15g)
  • 100 g cottage cheese
  • 1 tablespoon creamed horseradish
  • extra virgin olive oil
  • 100 g watercress
  • 100 g smoked salmon from sustainable sources
Instructions:
  • 1. Preheat the oven to 200ºC/400ºF/gas 6. 2. Scrub the potatoes, boil in salted water for 15 minutes, then drain and dry. 3. Transfer potatoes to a roasting tray, add sea salt, black pepper, and 2 tablespoons of olive oil, roast for 15 minutes. 4. Trim spring onions and asparagus, chop parsley. 5. Remove roasting tray from oven, gently squash potatoes, push aside. 6. Place spring onions and asparagus at the bottom of the tray, potatoes on top, return to oven for 15 minutes. 7. Grate lemon zest into a bowl, add juice, parsley, cottage cheese, horseradish, olive oil, season. 8. Dress watercress with lemon juice and olive oil. 9. Plate potatoes and veggies, top with dressing, smoked salmon, and watercress.
