Buttery Jersey Royal potato and sweet onion tart with taleggio cheese on a flaky crust. Perfect for a springtime meal with steamed greens or a crisp salad.
Ingredients:
  • 1 onion
  • 2 knobs of unsalted butter
  • 200 g Jersey Royals
  • 1 x 320 g pack of ready-rolled puff pastry
  • 2 sprigs of rosemary
  • 100 g taleggio cheese
Instructions:
  • Preheat the oven to 220°C/425°F/gas 7. Thinly slice the onion. In a medium non-stick frying pan over high heat, melt one knob of butter with ½ a tablespoon of olive oil. Add the onions and a pinch of salt, then reduce the heat to low and cook for 20 minutes until softened, stirring occasionally. Slice the potatoes thinly. On a baking tray lined with parchment paper, lay out the puff pastry. Score a border 2cm inside the edge and prick the base with a fork. Brush with olive oil. Arrange potato slices overlapping in one layer inside the border. Mix rosemary leaves with onions and sprinkle over potatoes. Cube the taleggio and sprinkle over the potatoes and onions. Season with salt and pepper. Brush pastry edges with melted butter. Bake for 20-25 minutes until golden. Serve with greens or salad.
