Rosemary roasted Jersey Royals

Ingredients:
  • 1.2 kg Jersey Royal potatoes
  • 1 bulb of garlic unpeeled
  • a few sprigs of fresh rosemary
  • sea salt
  • freshly ground black pepper
Instructions:
  • Preheat the oven to 190ºC/375ºF/gas 5. Boil the potatoes in a medium pan of salted water until cooked through (10-15 minutes). Let them steam dry, then place in a roasting tray and lightly mash with a potato masher. Add garlic, rosemary, salt, pepper, and a generous drizzle of olive oil. Roast in the oven for about 40 minutes until crispy and golden. Serve with Spring lamb and asparagus. Enjoy!
