Vegan spice-infused sweet potato cake made with simple pantry staples for a taste of autumn.
Ingredients:
  • 2.75 cups all-purpose flour
  • 1 cup granulated cane sugar
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cloves
  • 1.75 cups cooled coffee
  • 0.75 cup sunflower or canola oil
  • 3 tablespoons sweet potato puree
  • 1 cup confectioners' sugar, or more as needed
  • 1 tablespoon orange juice, or more as needed
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a bowl, thoroughly mix flour, sugar, cinnamon, baking powder, salt, and cloves. Incorporate cooled coffee, oil, and sweet potato puree, mixing until well combined. Evenly pour the batter into the prepared baking pan.
  • Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for about 30 minutes before serving.
  • Combine 1 cup confectioners' sugar, 1 tablespoon orange juice, vanilla extract, and cinnamon in a bowl. Adjust with more sugar or orange juice until you reach your preferred thickness. Pour the icing over the cooled cake.
