Delicious minted lamb with flavorful veggies for a quick weeknight meal!
Ingredients:
  • 12 Lamb Cutlets
  • 80ml olive oil
  • 62.50 ml finely chopped mint leaves
  • 1 red capsicum, seeded, thinly sliced
  • 250g cherry tomatoes, halved
  • 2 x 250g pkts Sweet Potato Noodles
  • 1 garlic clove, crushed
  • 60g pkt Baby Spinach
  • 40.00 ml red wine vinegar
  • Mint leaves, extra, to serve
Instructions:
  • In a large shallow glass or ceramic dish, mix the lamb with 1 tablespoon of oil and mint until well coated.
  • Preheat a hot barbecue grill or chargrill. Grill the lamb for 3 minutes on each side, or until it reaches your preferred doneness. Place the lamb on a plate and cover it with foil. Let it rest for 5 minutes before serving.
  • Heat the remaining oil in a large frying pan, then add the capsicum. Cook and stir for 2 minutes until just tender. Next, add the tomato and cook for 2 more minutes until it begins to collapse. Transfer this mixture to a bowl. In the same pan, cook the sweet potato noodles and garlic for 5 minutes until tender. Finally, return the capsicum mixture to the pan, add spinach, and toss to combine. In a separate bowl, mix vinegar with the remaining oil, then add to the sweet potato noodle mixture and toss to combine.
  • Portion out the lamb and sweet potato noodle mixture onto individual serving plates. Season to taste and garnish with fresh mint leaves before serving.
