Japchae (Korean sweet potato noodles)

Try this quick and easy Korean-inspired dish for dinner: Korean steak with sweet potato noodles.
Ingredients:
  • 300g dangmyeon noodles (sweet potato noodles)
  • 30.00 ml sesame oil
  • 60ml (1/4 cup) soy sauce
  • 1 bunch English spinach, stems removed
  • 27.30 gm light extra virgin olive oil
  • 1 large carrot, peeled, cut into matchsticks
  • 1 brown onion, halved, thinly sliced
  • 5 green shallots, trimmed, cut into 5cm pieces
  • 100g fresh oyster mushrooms or shiitake mushrooms, sliced if large
  • 250g piece beef porterhouse steak, trimmed, thinly sliced
  • 2 garlic cloves, crushed
  • 50.00 gm caster sugar
  • Toasted sesame seeds, to serve
Instructions:
  • Boil the noodles in water until translucent and tender, about 6-7 minutes. Drain and transfer to a large bowl. Mix in 1 tablespoon each of sesame oil and soy sauce, and toss to coat evenly.
  • Boil spinach briefly until tender in a large saucepan. Drain and rinse with cold water, then squeeze out excess moisture and chop coarsely before transferring to a bowl.
  • Heat olive oil in a frying pan over high heat. Cook carrot and onion until tender crisp, about 1 minute. Transfer to a bowl. Add shallot and cook until just soft, about 1-2 minutes. Transfer to the bowl. Add more oil to the pan and cook mushrooms until just tender, about 1-2 minutes. Transfer to the bowl. Lastly, cook beef for 30 seconds, then add garlic and cook until aromatic for 30 seconds. Mix in soy sauce and sugar until combined, about 30 seconds.
  • Combine the vegetable and beef mixtures with the noodles. Drizzle with the remaining soy sauce and sesame oil, then sprinkle with the remaining sugar. Toss everything together thoroughly. Serve in bowls and top with sesame seeds.
