Korean Japchae: Sweet potato noodles, beef, and veggies in a flavorful sesame stir-fry. Vibrant and delectable!
Ingredients:
  • 3 tablespoons soy sauce
  • 2.5 tablespoons white sugar
  • 2 tablespoons sesame oil
  • 2 teaspoons minced garlic
  • 8 ounces sweet potato noodles
  • 4 ounces lean beef, cut into 2-inch long strips
  • 6 ounces fresh spinach
  • 1 tablespoon vegetable oil, divided
  • 1 small sweet onion, thinly sliced
  • 4 mushrooms, stemmed and sliced
  • 1 small carrot, cut into matchsticks
Instructions:
  • Combine soy sauce, sugar, sesame oil, and garlic in a bowl and whisk until the sugar has completely dissolved into the sauce.
  • 1. Boil a large pot of lightly salted water. Cook sweet potato noodles until firm to the bite, about 6 to 7 minutes. Drain and rinse noodles under cold water. Toss noodles with 2 tablespoons of sauce in a bowl.
  • Rinse beef under cold water until juices run clear, then combine with 1 tablespoon sauce in a bowl.
  • 1. Boil water. Add spinach and cook for 1 minute until wilted. Drain and transfer to cold water. Squeeze out excess water, then season with salt and pepper in a bowl.
  • In a large skillet over medium-high heat, sauté the onion in 1 teaspoon of oil until fragrant but crisp. Transfer the onion to the bowl with the spinach. Using the same skillet, sauté the mushrooms in another 1 teaspoon of oil until lightly browned but still firm; add to the onion mixture. Finally, sauté the carrot in the remaining 1 teaspoon of oil until lightly browned but still crisp, then add to the onion mixture.
  • Brown the beef in the skillet and then add it to the onions. Heat the noodles in the same skillet and then add them to the beef and onion mixture. Toss everything together with the remaining sauce using your hands for an even coating.
