Sweet and savory glass noodle dish inspired by Korean japchae, with a unique twist omitting meat and vegetables for a simpler and lighter version.
Ingredients:
  • 1 (8 ounce) package sweet potato vermicelli (glass noodles)
  • 0.5 cup boiling water
  • 0.5 cup reduced-sodium soy sauce
  • 0.25 cup brown sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon toasted sesame seeds
Instructions:
  • Crush noodles into small pieces. Submerge in a deep dish and pour over hot tap water; let soak for 10 minutes.
  • In a 2-cup liquid measure, combine boiling water, soy sauce, and brown sugar, whisking until smooth.
  • Drain the noodles and place them in a bowl. Pour the soy mixture over the noodles and let them soak for 2 minutes.
  • In a large skillet over medium heat, warm the oil. Add noodles and soy mixture, stirring and cooking until hot, approximately 5 minutes.
  • Serve noodles in individual bowls, sprinkle with sesame seeds for a delightful finish.
