Sweet potato latkes

Family-favorite sweet potato hash browns.
Ingredients:
  • 1 (about 500g) sweet potato (kumara), peeled, coarsely grated
  • 70g (1/2 cup) cornflour (see note)
  • 2 shallots, ends trimmed, thinly sliced
  • 1 egg, lightly whisked
  • 60ml (1/4 cup) olive oil
  • Sour cream, to serve
  • Trident Sweet Chilli Sauce, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • In a spacious bowl, mix together the sweet potato, cornflour, shallot, and egg.
  • In a hot frying pan with 2 teaspoons of oil, spoon heaping 8 tablespoonfuls of sweet potato mixture. Flatten with a spatula and fry each side for 2 minutes until crispy and golden. Place on a paper towel-lined baking tray. Repeat this process in 4 more batches to use up all the sweet potato mixture, adding more oil as needed.
  • Place the latkes beautifully on a platter, generously add a dollop of sour cream on each, then drizzle with a touch of sweet chili sauce, and garnish with fresh coriander leaves before serving.
