Sweet potato latkes fried in fragrant olive oil, served with tangy applesauce and creamy yogurt - a festive and irresistible dish.
Ingredients:
  • 1 large sweet potato, peeled and grated
  • 0.5 onion, grated
  • 2 eggs
  • 2 teaspoons olive oil, or more if needed
  • 1 cup applesauce
  • 1 cup plain nonfat yogurt
Instructions:
  • Preheat the oven to a toasty 200 degrees F (95 degrees C) and gracefully line a baking sheet with paper towels.
  • 1. Prepare a bowl of lightly-salted water. Rinse the grated sweet potato in the water, then drain in a sieve. Pat dry the grated sweet potato with a cloth or paper towels before transferring to the bowl. Squeeze out any excess moisture from the grated onion and add it to the bowl. Stir in the eggs and pepper until thoroughly mixed.
  • In a nonstick skillet over medium heat, heat olive oil and spoon 1 heaping tablespoon of the potato mixture per patty into the hot oil. Flatten with a fork and fry until golden brown and crisp on the bottom, about 5-8 minutes. Flip, cook the other side, sprinkle with salt, then transfer cooked patties to a baking sheet in the preheated oven. Stir potato mixture before cooking each batch. Serve hot with applesauce and yogurt.
