Elevate classic latkes with sweet potatoes, tangy apples, and warm cinnamon. Ready in just 30 minutes, this festive Hanukkah dish is a must-try.
Ingredients:
  • 2 medium sweet potatoes, peeled
  • 2 small tart apples, peeled
  • 1/4 cup finely chopped onion
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Pinch freshly ground pepper
  • 2 eggs, lightly beaten
  • Canola oil for frying
Instructions:
  • In a large bowl, grate sweet potatoes followed by apples to prevent browning. Gently pat dry with a paper towel to remove excess moisture. Mix in all remaining ingredients except oil until combined.
  • Heat a quarter-inch of oil in a large skillet over medium-high heat for 2 to 3 minutes until hot. Drop spoonfuls of batter into the oil, flatten to make 2- to 3-inch pancakes. Fry each side for 4 to 5 minutes until golden brown and edges are bubbly. Drain on paper towels on a plate and serve hot.
