Sweet and Spicy Sweet Potato Soup

Fall sweet potato & apple soup with ginger, lime. Top with sour cream, cilantro, spicy nuts.
Ingredients:
  • 3 tablespoons olive oil
  • 4 shallots, sliced
  • 1 pound tart apples, cored and cut into 1/4-inch pieces
  • 2 tablespoons grated fresh ginger
  • 1 lime, zested and juiced
  • 0.25 teaspoon red pepper flakes, or more to taste
  • 0.25 teaspoon ground cayenne pepper, or more to taste
  • 2 quarts chicken broth
  • 2 (15 ounce) cans sweet potatoes, drained
  • 0.5 teaspoon salt, or to taste
  • 1 lime, cut into wedges
Instructions:
  • In a large soup pot over medium heat, sauté shallots in olive oil until soft, about 3 minutes. Add apples, ginger, zest from 1 lime, red pepper flakes, and cayenne pepper. Cook until apples are very soft, approximately 15 minutes. Remember to reserve lime juice for later.
  • Start by gently pouring the flavorful chicken broth into your waiting pot, then add the sweet potatoes along with a touch of salt. Allow the ingredients to meld their flavors together by bringing them to a gentle boil under cover. Lower the heat and let the ingredients simmer for about 10 minutes. Transform the mixture into a luxurious, velvety soup by using an immersion blender to puree it until smooth. Finish off by stirring in the reserved lime juice to infuse a burst of zesty freshness. Finally, elevate the presentation by garnishing the soup with elegant lime wedges before serving.
