Spicy shrimp and sweet potato soup with diced tomatoes and green chiles is a flavorful one-pot meal for any time of day.
Ingredients:
  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 0.5 teaspoon minced garlic
  • 4 cups vegetable stock
  • 4 cups corn
  • 2 cups peeled and diced sweet potatoes
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 1 cup salsa
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1.5 pounds peeled medium shrimp
  • 4 green onions, chopped
Instructions:
  • In a large pot over medium heat, sauté onion and garlic in olive oil until onion is tender, about 10 minutes. Stir in vegetable stock, corn, sweet potatoes, diced tomatoes with green chile peppers, salsa, chili powder, cumin, salt, and pepper. Bring to a boil and simmer for 5 minutes.
  • Add the juicy shrimp to the flavorful stock, gently bringing it back to a boil. Let it simmer on medium heat until the shrimp are perfectly cooked, approximately 10 more minutes. Then, mix in the fresh green onion and season the soup with a pinch of salt and a sprinkle of pepper.
