Quick and healthy sweet and spicy shrimp dish, ready in 20 minutes with 60% less fat and 45% less sodium.
Ingredients:
  • 2 mangoes, seeded, peeled, and chopped
  • 1 cup frozen shelled edamame, prepared according to package directions and cooled slightly
  • 1 red sweet pepper, seeded and chopped
  • 1/2 cup finely chopped green onions
  • 1/4 cup snipped fresh cilantro
  • 2 tablespoons lime juice
  • 1 1/2 tablespoons canola oil
  • 1 pound fresh or frozen large shrimp
  • 2 teaspoons purchased salt-free Cajun seasoning
  • Belgian endive leaves (optional)
Instructions:
  • In a medium bowl, mix together mangoes, edamame, red pepper, green onions, cilantro, lime juice, 1/2 tablespoon canola oil, and salt. Gently toss to combine. Chill covered until serving, for up to 2 hours. Yield: 3 cups.
  • If shrimp is frozen, defrost it. Peel and devein the shrimp, leaving tails on if preferred. Rinse and pat dry the shrimp. In a large bowl, coat the shrimp with Cajun seasoning. Heat 1 tablespoon canola oil in a large skillet over medium-high heat. Cook the shrimp for about 5 minutes, stirring occasionally, until they turn opaque.
  • Present the shrimp alongside a vibrant mango-edamame salsa, and optionally offer delicate Belgian endive leaves on the side.
