Sweet and spicy marinated shrimp and apple skewers grilled to perfection, served over your choice of white rice, noodles, or mixed green salad.
Ingredients:
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon strawberry jam
  • 0.25 teaspoon crushed red pepper flakes
  • 1 clove garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 2 Gala apples, cored and cut into eighths
  • 16 jumbo shrimp, peeled and deveined
Instructions:
  • Combine honey, olive oil, basil, strawberry jam, red pepper flakes, garlic, red wine vinegar, lemon juice, and white sugar in a small bowl. Place apples and shrimp in a large resealable plastic bag, then pour in the marinade. Seal the bag and shake to coat everything well. Refrigerate for 30 minutes before cooking.
  • Get the outdoor grill ready for some sizzling action at medium-high heat.
  • Skewer the shrimp and apples alternatively onto 4 metal or soaked wooden skewers, then discard the excess marinade.
  • Grill the skewers until the shrimp turn opaque, approximately 5 minutes on each side, on the preheated grill.
