Delight in a sweet potato and apple salad topped with crunchy walnuts - a delectable side dish.
Ingredients:
  • 2 1/4 lb sweet potatoes (about 4 medium), peeled, cut into 1/2-inch cubes
  • 1/4 cup chopped walnuts
  • 2 lb Granny Smith apples (about 4 medium), cut into 1/2-inch cubes
  • 2 tablespoons sugar
  • 2 tablespoons fresh lime juice
  • 3 tablespoons raisins
  • 1/2 cup plain fat-free yogurt
  • 3 tablespoons reduced-fat mayonnaise
Instructions:
  • In a 4- to 6-quart Dutch oven, set up a steamer basket with 1/2 inch of water (water should not touch the bottom of the basket). Steam sweet potatoes covered until tender, about 16 to 17 minutes. Quickly cool in ice water, then drain.
  • Sprinkle walnuts in a dry heavy skillet. Cook over medium heat for 5 to 7 minutes, stirring occasionally until nuts start to brown, then stir constantly until golden brown.
  • In a spacious bowl, generously dust apples with sugar and lime juice, then delicately toss to coat. Add sweet potatoes, raisins, salt, and 3 tablespoons of walnuts.
  • Combine yogurt and mayonnaise in a small bowl. Drizzle over sweet potato mixture and toss gently to coat. Sprinkle with remaining tablespoon of walnuts. Chill in the fridge for at least 2 hours or up to 12 hours before serving.
