Dukkah pork with roast apple salad

Pork cutlets with spicy dukkah and sweet apples for a sensational flavor combination.
Ingredients:
  • 500g desiree potatoes, cut into 2.5cm pieces
  • 560g apple
  • 1 red onion, halved, cut into wedges
  • 36.40 gm olive oil
  • 125.00 ml dry-roasted hazelnuts, chopped
  • 1 orange, juiced
  • 62.50 ml dukkah spice mix
  • 4 pork loin cutlets
Instructions:
  • Preheat the oven to 220°C. Line a baking tray with non-stick baking paper. Place potatoes and 1 tablespoon of cold water in a large heatproof bowl, cover with plastic wrap, and microwave on high for 5 minutes. Drain and return potatoes to the bowl.
  • Combine apples, onion, and 1 tablespoon of oil with potatoes until evenly coated. Arrange in a single layer on the baking tray. Roast for 20 minutes until golden brown. Sprinkle with hazelnuts, drizzle with 2 tablespoons of orange juice, cover, and let sit.
  • Warm the rest of the oil in a spacious non-stick frying pan over medium-high heat. Press dukkah onto both sides of pork using your fingertips. Cook pork for 4 minutes on each side or until just cooked through. Serve with a side of salad.
