Spicy pork with sweet and sour capsicum for a flavor explosion.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 2 red capsicums, thickly sliced
  • 2 yellow capsicums, thickly sliced
  • 2 garlic cloves, sliced
  • 5.00 gm caster sugar
  • 40.00 ml capers, rinsed, drained
  • 60g raisins
  • 2 tsp red wine vinegar
  • 2 x 400g pork fillets, trimmed, halved
  • 40.00 ml dukkah (see note)
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Preheat your oven to 200°C to get it nice and toasty for your recipe.
  • In a large, deep frypan over medium-high heat, heat the olive oil. Add capsicum, garlic, and sugar. Season and cook for 15 minutes, stirring occasionally, until capsicum is softened. Then, add capers, raisins, and vinegar. Cook for another 5 minutes until the liquid is reduced.
  • Heat an oven-safe pan over high heat. Season the pork, then cover with dukkah and spritz with oil. Sear the pork for 6 minutes, flipping occasionally, until evenly browned. Finish cooking in the oven for 12-15 minutes until done.
  • Slice the pork fillet, arrange on plates with salad, and garnish with chopped parsley before serving.
