Sweet potato, apple and walnut salad

Ingredients:
  • 850g orange sweet potato, peeled, halved crossways, cut into long, thin wedges
  • 36.40 gm olive oil
  • 1 granny smith apple, cored, thinly sliced
  • 86.25 gm walnuts, toasted
  • 40g baby spinach leaves
  • 20.00 ml apple cider vinegar
Instructions:
  • Preheat the oven to 200°C. Arrange sweet potato in a greased roasting pan, drizzle with oil, season with salt and pepper, and toss to coat evenly. Roast for 35 to 40 minutes, flipping halfway, until golden and tender. Allow to cool for 15 minutes before serving.
  • Place the sweet potato and pan juices in a bowl. Add apple, walnuts, spinach, vinegar, salt, and pepper. Mix everything together and serve.
