Smoked Pork Chops with Apple and Sweet Potato

Try delicious smoked pork chops for a quick and tasty autumn/winter meal.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 large dark-orange sweet potato, peeled, cut into 1/2-inch slices and slices quartered
  • 1 large unpeeled Granny Smith apple, cut into 1/2-inch pieces
  • 1/2 small onion, cut into thin wedges and wedges separated
  • 1 tablespoon packed brown sugar
  • 4 fully cooked smoked boneless pork chops (about 2 1/2 oz each)
Instructions:
  • Preheat the oven to 425°F. Grease a 15x10x1-inch pan with cooking spray. Combine oil, cinnamon, cumin, and coriander in a small bowl.
  • Combine the sweet potato, apple, and onion in a large bowl. Drizzle with 1 tablespoon of the oil-spice mixture and toss to coat. Spread the mixture in the pan.
  • Bake for 30 minutes. In the meantime, blend brown sugar into the rest of the oil and spice mixture (it will become thick). Spread the mixture over one side of each pork chop.
  • Take the pan out of the oven. Use a spatula to shift the vegetable mixture to one side of the pan. Then, place the pork on the other half of the pan with the coated side facing up.
  • Continue baking until the pork is thoroughly heated and the sweet potato and apple are tender, about 8 to 10 minutes longer.
