Pork Chops with Apple-Sage Stuffing

Transform classic stuffing mix with apples and sage, paired with smoked chops and left overnight for intensified flavors.
Ingredients:
  • 1 tablespoon butter
  • 1/2 cup chopped onion (1 medium)
  • 1/2 cup thinly sliced celery
  • 1 cup chopped apple
  • 1/2 cup raisins
  • 1 cup apple juice
  • 1 (6-oz.) pkg. sage and onion-seasoned one-step stuffing mix
  • 4 (4-oz.) boneless smoked pork chops
  • 2 tablespoons apple jelly
Instructions:
  • Prepare an 8-inch square (2-quart) glass baking dish by spraying it with nonstick cooking spray. In a large skillet over medium heat, melt butter. Add onion and celery, cooking for 3 to 4 minutes until crisp-tender, stirring occasionally.
  • Combine the apple, raisins, and apple juice in a saucepan and bring to a boil for 2 to 3 minutes. Remove from heat and mix in the stuffing. Spread the mixture in a baking dish, then place the pork chops on top. Cover with foil and refrigerate for at least 8 hours or overnight before cooking.
  • Preheat the oven to 350°F and bake covered for 30 minutes.
  • Uncover the baking dish and glaze the pork chops with jelly. Bake for an additional 15 to 20 minutes until the pork chops are fully heated through.
