Pork Chops with Apples and Sage

Savory pork chops with sautéed apples and fragrant sage for a delicious meal.
Ingredients:
  • 2 1/2 cups apple juice
  • 1/4 cup kosher (coarse) salt
  • 4 boneless center-cut pork chops, 1/2 inch thick (4 oz each)
  • 1/2 teaspoon pepper
  • 2 teaspoons olive oil
  • 3 Granny Smith apples (about 1 1/4 lb), peeled, sliced
  • 1 tablespoon packed brown sugar
  • 1 tablespoon chopped fresh or 1 teaspoon dried sage leaves
Instructions:
  • Combine 2 cups of apple juice, 1/2 cup of brown sugar, and salt in a large resealable plastic bag. Add pork chops, seal the bag, and refrigerate for 8 hours, turning occasionally.
  • Discard marinade and drain pork chops. Pat them dry and sprinkle 1/4 teaspoon of pepper on them. In a 12-inch nonstick skillet, heat oil over medium-high heat. Cook pork chops for 3 minutes on each side. Reduce heat to medium-low and cook for 1 to 2 minutes more on each side until pork is no longer pink inside. Remove from skillet and cover to keep warm.
  • Place apples in a skillet and sauté for 4 minutes, stirring occasionally until they are lightly browned. Then, mix in 1 tablespoon of brown sugar, sage, remaining 1/2 cup of apple juice, and 1/4 teaspoon of pepper. Increase the heat to medium-high and cook for another 3 minutes until the apples are soft. Finally, serve the apples over the pork chops.
