Succulent pork paired with fragrant sage and sweet apple for a harmonious blend of flavors.
Ingredients:
  • 4 large pork cutlets
  • 62.50 ml fresh sage leaves
  • 56.88 gm olive oil
  • 42.00 gm lemon juice
  • 1 lettuce, leaves separated, washed, dried (see note)
  • 2 apples, cores removed, cut into thin wedges (see note)
Instructions:
  • In a ceramic dish, lay out the pork cutlets. Finely chop one-third of the sage leaves. In a jug, mix 2 tablespoons of oil, lemon juice, chopped sage, salt, and pepper. Whisk the ingredients together. Pour the mixture over the cutlets, ensuring they are well coated. Cover the dish and refrigerate for 1 hour before proceeding.
  • Put the lettuce and apples in a big bowl. Drizzle with the remaining oil and sprinkle with salt and pepper. Give it a gentle toss.
  • 1. Heat a large non-stick frying pan over medium-high heat. Take the cutlets out of the marinade, saving the marinade. Cook each side for 3 to 5 minutes or until fully cooked. Place on a plate and cover to keep warm. Add the reserved marinade and remaining sage to the hot pan. Cook for 2 to 3 minutes until the sage is crispy.
  • Arrange the pork on plates, garnish with crispy sage, and generously drizzle with the warm marinade before serving alongside a fresh apple salad.
