Sage and lemon balm infused juicy chicken.
Ingredients:
  • 0.25 cup lemon balm leaves, divided
  • 0.25 cup fresh sage leaves, divided
  • 0.25 cup softened butter
  • salt and pepper to taste
  • 1 (3 1/2) pound whole chicken
  • 1 teaspoon garlic powder
Instructions:
  • Preheat the oven to 400°F (200°C).
  • Reserve 1/3 of the lemon balm and sage leaves. Finely chop the rest and combine them with butter in a bowl. Season with salt and pepper, then mix well. Gently lift the chicken skin and spread the butter mixture underneath. Season the chicken skin with garlic powder, salt, and pepper. Fill the chicken cavity with the reserved herbs and place the chicken breast-side-down on a roasting pan.
  • Roast in the preheated oven for 30 minutes. Turn the chicken breast-side-up and bake until no longer pink at the bone and the juices run clear, about 20 minutes. Use an instant-read thermometer to ensure the thickest part of the thigh near the bone reaches 180 degrees F (82 degrees C). Remove from the oven, cover with aluminum foil, and let it rest in a warm area for 10 minutes before slicing.
