Tangy lemon-garlic roasted potato wedges: a simple, delectable winner.
Ingredients:
  • 1.5kg cream delight potatoes
  • 2 garlic cloves, thinly sliced
  • 1 tsp dried oregano
  • 56.88 gm extra virgin olive oil
  • 65.63 gm lemon juice
Instructions:
  • Preheat your oven to 150C (130C fan-forced).
  • Start by peeling and cutting the potatoes into wedges, then arrange them in a large roasting pan. Sprinkle generously with garlic and oregano before drizzling with oil, lemon juice, and 1/2 cup of cold water. Finish by seasoning with salt and pepper to your liking.
  • Roast the potatoes for 1 hour, flipping halfway through.
  • Preheat oven to 200C / 180C fan-forced. Roast potato wedges for 15 to 20 minutes until golden and crispy. Serve.
