Golden brown roasted potatoes with garlic, lemon, and oregano.
Ingredients:
  • 3 pounds potatoes, peeled and cubed
  • 3 cups hot water
  • 0.5 cup fresh lemon juice
  • 0.33333334326744 cup vegetable oil
  • 1.5 teaspoons dried oregano
  • 0.5 teaspoon ground black pepper
  • 0.25 cup chopped fresh parsley
Instructions:
  • Preheat your oven to 475 degrees F (245 degrees C).
  • In a 12x18 inch baking dish or roasting pan, combine cubed potatoes, water, lemon juice, vegetable oil, and olive oil. Season generously with oregano, salt, pepper, and garlic.
  • Roast the potatoes in the preheated oven until tender and golden brown. Stir every 20 minutes while baking, adding water if needed to prevent sticking. Allow water to evaporate in the last 15-20 minutes, being mindful not to burn. Mix in the fresh parsley and serve.
