Classic Greek Chicken Thighs and Potatoes: Marinated in garlic, lemon juice, and olive oil, then baked to perfection.
Ingredients:
  • 0.5 cup olive oil
  • 3 lemon, juiced
  • 6 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 1.5 pounds chicken thighs
  • 5 potatoes, peeled and cut into wedges
  • lemon zest for garnish
Instructions:
  • Mix together the olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Pour the marinade over the chicken thighs in a separate bowl. Cover and let it marinate in the fridge for at least 30 minutes, or overnight for maximum flavor.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C), then transfer the marinated chicken into a roasting pan along with the potatoes.
  • Place the marinated chicken in the oven and bake for 30 minutes. After that, flip the chicken over, baste with the marinade, and continue baking until fully cooked, about 35 more minutes. Check the doneness by ensuring the juices run clear and a thermometer reads 165 degrees F (74 degrees C) near the bone. Finally, transfer the chicken and potatoes to a platter and sprinkle with fresh lemon zest before serving.
