Mediterranean chicken tray bake recipe

Simplify your kitchen with this vibrant Mediterranean one-tray meal. Tender chicken thighs and potatoes seasoned with aromatic herbs, feta, lemon, and olives for a taste of Greece. Versatile for weeknights or entertaining, and cleanup is a breeze. Serve with your favorite veggies!
Ingredients:
  • 4 large chicken thigh cutlets, skin on
  • 600g baby coliban (chat) potatoes, unpeeled, halved
  • 60mL (¼ cup) olive oil, plus extra, to drizzle (optional)
  • 60mL (¼ cup) fresh lemon juice
  • 4 garlic cloves, crushed
  • 1 ½ tbsp dried oregano leaves
  • 1 lemon, quartered
  • 40g salted butter, chopped
  • 100g feta, crumbled
  • 60g (⅓ cup) pitted green olives
  • 1 baby cos lettuce, quartered
  • Chopped fresh oregano leaves, to serve (optional)
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Arrange the chicken and potato on a baking tray. Mix together the oil, lemon juice, garlic, oregano, and 2 tbsp water. Season with pepper and then pour this flavorful mixture over the chicken and potato. Roast everything for 30 minutes.
  • Squeeze the lemon over the tray and dot everything with butter. Roast for another 30 minutes, or until the chicken is cooked through with crisp skin and the potatoes are tender.
  • Sprinkle feta and olives over the tray bake. Serve on plates with lettuce. Drizzle with a bit more oil and sprinkle with oregano, if desired.
