Use leftover roast chicken to make a delicious Mediterranean chicken pasta salad - perfect for a quick and satisfying meal.
Ingredients:
  • 1000.00 ml dried farfalle pasta
  • 1 small barbecued chicken, skin and bones removed, shredded
  • 250g cherry tomatoes on vines
  • 1 lebanese cucumber, halved, sliced
  • 1 red capsicum, sliced
  • 1 small red onion, sliced
  • 250.00 ml fresh basil leaves, shredded
  • 250.00 ml fresh flat-leaf parsley leaves, torn
  • 165.00 ml pitted kalamata olives
  • 82.50 ml pine nuts, toasted
  • Dressing
  • 80ml red wine vinegar
  • 60ml olive oil
  • 1 garlic clove, crushed
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente. Drain and rinse with cold water. Drain well.
  • Combine the pasta, chicken, tomato, cucumber, capsicum, onion, basil, parsley, olives, and pine nuts in a large mixing bowl.
  • Prepare the dressing by combining vinegar, oil, and garlic in a screw-top jar. Add black pepper, secure the lid tightly, and shake vigorously to blend the flavors.
  • Drizzle the flavorful dressing over the fresh salad and gently mix together. Enjoy immediately.
