Whip up a quick and tasty pesto pasta with chicken sausage and peas for a delicious weeknight meal!
Ingredients:
  • 2 1/2 cups uncooked rotini pasta (8 oz)
  • 1 tablespoon oil
  • 3 chicken sausages, cut into 1/2-inch slices
  • 1 1/4 cups frozen sweet peas (from 12-oz bag)
  • 3/4 cup basil pesto
  • 1 cup finely shredded Italian cheese blend (4 oz)
  • 1 tomato, seeded and chopped
Instructions:
  • Prepare pasta following the package instructions, then drain.
  • Heat oil in a 12-inch skillet over medium-high heat. Brown sausage in the oil. Add cooked pasta, frozen peas, and pesto. Stir occasionally and cook for about 5 minutes until heated through.
  • Sprinkle cheese and tomato slices over the top and cook gently for about 3 minutes until the cheese is perfectly melted.
