Enjoy flavorful BBQ lemon drumsticks with a side of Mediterranean pasta salad.
Ingredients:
  • 36.40 gm olive oil
  • 60ml lemon juice
  • 10.00 gm smoked paprika
  • 3 tsp garlic powder
  • 1 tsp cracked black pepper
  • 12 Chicken Drumsticks
  • 250g penne
  • 300g Australian Mediterranean Style Salad
  • 80ml italian salad dressing
  • Lemon wedges, to serve
Instructions:
  • Mix together the oil, lemon juice, paprika, garlic powder, and pepper in a disposable baking dish, then add the chicken and coat it evenly by tossing.
  • Preheat a covered barbecue on high heat or alternatively preheat the oven to 230C. Place the chicken in the barbecue or oven and lower the heat to medium or 200C. Roast the chicken in the covered barbecue using indirect heat or in the oven, turning occasionally, for 35 mins or until it is fully cooked through and browned.
  • Cook the pasta in a pot of salted boiling water according to package instructions until just tender. Rinse with cold water, then drain and transfer to a large bowl. Mix in the salad and dressing, tossing to blend well.
  • Plate the pasta salad, arrange the chicken on top, and serve with lemon wedges.
