Grill lamb chops for a smoky, flavorful finish.
Ingredients:
  • 8-10 lamb cutlets
  • 20.00 ml chopped chives
  • 82.50 ml chopped mint
  • 21.00 gm lemon juice
  • 82.50 ml chopped flat-leaf parsley
  • 1 tsp finely grated lemon rind
  • 60ml olive oil
Instructions:
  • Prepare the cutlets by trimming off any excess fat. In a bowl, combine oil, lemon juice, lemon rind, parsley, mint, chives, salt, and pepper. Mix thoroughly. Add the cutlets and toss to ensure they are evenly coated. Cover and refrigerate for 10 minutes.
  • Preheat a non-stick frying pan or grill plate over medium heat. Cook the cutlets for 3 minutes on each side or until they reach your desired level of doneness. Serve with a fresh green salad and corn on the cob.
